Mississippi Mud Pie

Did you know that the name "Mississippi mud pie" comes from the dense cake which resembles the banks of the Mississippi River? I haven't seen those banks therefore cannot vouch for it 100% but this time I will rely on the source Wikipedia. It is believed that this dish was created by home cooks after World War II because it was made of simple ingredients that could be found at any supermarket and did not require any special cooking tools.
It is pure joy to just dig into a decadent that is chocolate, chocolate and more chocolate..


The one that I did had a crust of Oreo biscuits crushed and mixed with butter, chocolate, egg yolks, almond powder and butter folded into a blanket of egg whites and topped with chocolate ganache with white chocolate thrown in as snow!! 


















Ingredients
For the base
300g Oreo biscuits, crushed
75g butter, melted
For the filling
125g dark chocolate
125g butter
3 eggs
125g sugar
125g almond powder (coarsely ground)
For the ganache and topping
85g dark chocolate
85g double cream
White chocolate grated just as icing on the cake
 Method
1.   Preheat the oven to 180C.
2.   Mix the biscuits and melted butter together in a bowl. Press the mixture into the base and sides of a medium size baking dish. 
3.   Melt the chocolate and butter together in a double boiler (bowl set over a pan of simmering water. Do not let the base of the bowl touch the water). 
4.   Whisk the eggs and sugar together in a bowl until soft peaks are formed. 
5.   Fold in the filling mixture. 
6.   Pour into the baking tin and bake in the oven for 40-50 minutes, or until just set. 
7.   Remove from the oven and set aside to cool completely.
8.   Add the chocolate chips in a bowl and pour the boiled cream on it and set it aside for a few minute. 
9.   Whip it up to with some butter to get a shiny smooth fudge sauce. Let it cool.


Spread the sauce over the cooled pie and sprinkle the grated white chocolate and chill in the fridge for 20 minutes and serve.
