When you have besties over, the best way of letting them know they are special is by putting that extra little bits in your cooking. Here's what I did ...some Achari Paneer (cottage cheese), Kheema paratha turned finger food, Cheesy garlic Parmesan dinner roll turned finger food and one pan roasted chicken and baby potato. I did follow it up with some appams and chicken curry as the main course but guess everyone was too sleepy and tired at 1 am to eat anything else. No excuses for a sweet treat though!! So Mississippi mud pie and Lemon cheese cake it was.

Achari Paneer (cottage cheese)
Just cubed paneer marinated for a couple of hours in curd and Achar masala and then baked in the oven for 20 mins at 180 degree C. Ta da!!!
The achar flavour reminds me of Jabalpur where i spent most of my childhood ( we are children till we get ourselves a job and move out of the house!!) Okay so the reason i love this flavour is because in those days my mum would make this absolutely divine 'aam ka achar' ( mango pickle) and as a preservative there would be a good amount of oil and salt added. The oil would cover the pickle barni ( pickle bottle) to the brim. Over time when the mango would be spooned out for use the oil would remain in this big bottle. This oil would be full of flavours from the Mango and all the other masalas that were used. Now if that oil was used to saute onions for any veggies it would just taste out of the world. Now that is where i got my first taste of anything 'Achari'. This oil also taste wonderful while making chicken curry or any other meat. Try it!!
